Week of April 19, 2021!

04/19/21 Monday, I worked from home, AA is in virtual school, then she went to her golf lesson (and played nine holes with Coach and Jenna) while we went to the River House to meet up with Maureen, Hugh and Kathy. I took my old standby appetizer of cherry tomatoes, basil and mozzarella cheese on skewers. It was beautiful weather! Came home and made the Shrimp with Broccoli and rice. I made it last summer a couple of times, but I don't think I posted the recipe so here it is:
Easy Sheet Pan Chili Garlic Roasted Shrimp and Broccoli
INGREDIENTS
1 pound broccoli, cut into bite-sized florets
1 tablespoon vegetable oil
3 tablespoons tamari or soy sauce
1 tablespoon grated or minced fresh ginger
1 tablespoon sambal or Asian chili-garlic sauce (I double)
2 teaspoons Asian sesame oil
1 pound uncooked peeled and deveined medium shrimp
Salt, Freshly ground black pepper
Cooked white or brown rice, for serving
1/4 cup thinly sliced scallions, for serving
Arrange a rack in the middle of the oven and heat to 400°F.
Place the broccoli on a rimmed baking sheet, drizzle with the oil, and toss to evenly coat. Spread into an even layer and roast for 10 minutes. Meanwhile, whisk the tamari or soy sauce, ginger, chili-garlic sauce, and sesame oil together in a small bowl; set aside. Season the shrimp with salt and pepper.
Add the shrimp and soy sauce mixture to baking sheet, toss with the broccoli, and spread back into an even layer. Roast again, stirring halfway through, until the shrimp are just opaque and the broccoli is tender, 6 to 8 minutes more. Serve in bowls over rice, sprinkled with the scallions.
Tuesday, I worked from home, had a bit too much wine yesterday so didn't sleep well, nursed my slight headache at home. I thought I would take a nap but work got busy so didn't have much of a break. We made leftover pork tacos, still a favorite meal for us. AA finished a library book in one day, checked it out yesterday. Off to the library again this week. She practiced her golf after school then we all caught a break in the evening. We love watching Finding Your Roots on Tuesday evenings.
Wednesday: I worked at the NGS office. AA played seven holes with Coach, Jenna, Kalia. Dinner was homemade spaghetti and meatballs, Texas toast. Yum!
Thursday: I worked at the NGS office, came home to homemade air-fryer salmon for dinner.
Friday: I worked from home, only a few hours. Went to BJ's with Carolyn, stocked up on our bulk purchases, like toilet paper, paper plates, napkins, canned tomatoes, plus many fresh fruit and veggies (and a 34 bottle pack of Samuel Adams Boston lager!). After school, AA practiced her golf with Cambree and Jenna. Ford made homemade pizza, we drank a little wine on the screen porch, beautiful weather in the mid-70's. AA and I played two games of Gin Rummy, I won so AA was not happy!

Saturday: I made delicious orange-cranberry scones for breakfast (with orange zest and orange juice). AA made the "Happy Birthday" cheesecake (with sprinkles) for Liv's birthday (same one we made for Carolyn's birthday), unfortunately we forgot they were out of town this weekend, so Ford will probably take it over on a weekday. 
With the weather threating, we headed to the River House 30 minutes earlier, we did get some fierce wind but no rain, so enjoyed our "happy hour" on the covered porch. Hugh and Maureen are making a quick, 2-day trip to Tampa to see their newest great-grandbaby. Kathy had an angioplasty procedure as one main leg artery was 90% blocked!

I also made Mom's potato salad, to go with our grilled hotdogs for dinner.
We had a short putting contest inside and Ford won! Boo!!
Sunday: Lazy morning (I didn't watch a church service, bad me).  We planned some meals so Ford went to the grocery store. Ford started the motorcycle so we could send a video to Bobby, that it does run!
AA went to the driving range (2:30 p.m.) then out playing nine holes with Coach, Jenna and Kalia (Emmet and his Dad joined them for a few holes too). 
A simple duplicate dinner from last night (potato salad and hotdogs), was an easy meal to finish the day. A good week, fairly routine with no surprises. Onto April 26th!
