Aerial Tribe CD Release Party

Aerial Tribe is headlining this Friday night at Freebird Live in Jacksonville Beach, Florida. Pictured above is the lead guitar player, Jesse, who just happens to be our SIL. Friday's show debuts the release of their latest CD, AERIALISTIC that you can check out here. And if you all would be so kind, please leave a comment on what you think about the new CD. Really, check it out and leave some feedback. The band appreciates it and hopes you like their sound enough to BUY IT!

Birthdays, Willie Nelson & Voices

I was trying to think back to when I turned 21. I know the city I was living in at the time. However, I don't recall how I celebrated the third most important birthday of my life. Provided you don't include the day you were born, the first most important birthday was turning 13. A TEENAGER! Oh yeah, that was big. BIG.

The second most important birthday was turning 16. Can you say DRIVE. Turning 16 was HUGE! It was freedom baby.

The third biggest birthday was the infamous turning 21. ADULT! Not to bash the 18 year old crowd but 21 was all about being a MAN, a WOMAN, an ADULT or so I thought then...

Today marks our 21st month in the adoption quest for Alyzabeth An since getting our LID back in 2006. I numbly found myself imitating Willie Nelson singing "Gee, ain't it funny, how time slips away". Sorry Willie, I guess I'm not in the fun zone right now but I really do like the song. Honest, great song...

So, congratulations to US. We've made it 21 months and you know what? That's cool. That's OK. Those before us fulfilled their quests sooner. That's a good thing. Others, most likely, will have journeys longer than ours. That's a sad thing. I'd give anything to help change that...

For now, it's one slow referral month at a time. But it's progress. I can hear this mystic voice in my head exhorting "Stay in the queue, every one please take one step forward. No shoving. Stay in line please..."
Disclaimer: I don't hear voices all the time. Just so you know.

So, until next month, Keep the faith. Heads high everyone. And God's Peace with each step of your journey. Oh, and one last thing. Do stay in line..... Just a little bit farther and we're all there. Forever Day. Forever Families...

Cheesy Shepherd's Pie Casserole

Leaa (DD) hosted a Mary Kay party last week. As Aly was attending and really wouldn't have time to eat before going, I called Leaa and offered to send down a casserole. She heartily accepted. Of course I couldn't just send something tried and true. Nope, I decided to use them as Guinea Pigs and sent down a never tried recipe. What the heck, it's a staple comfort food recipe so I couldn't really go wrong. Well, it could go wrong but why go there.

Anyway, this is the Americanized version of Shepherd's Pie and nothing our cousins across The Pond would considered even remotely true to the original recipe. I trust they'll be tolerant to the changes. I must admit, I sampled the British version of Shepherd's Pie while visiting and loved it but then I love lamb.

I hope you'll let me know if you do give this a try and what improvements you made.

Cheesy Shepherd's Pie

INGREDIENTS:


1: (10 oz) Can condensed cheddar cheese soup (undiluted and divided)
3: Cups hot russet mashed potatoes (you can cheat and use frozen potatoes)
2: Lb lean ground beef
1:Teaspoon dried oregano
1: Small onion, chopped
1 to 2: Tablespoon minced fresh garlic (to taste)
1 to 2: Teaspoon seasoning salt (or use white salt)
1: Teaspoon fresh ground black pepper (to taste)
2: Cups shredded cheddar cheese (can use more or less - splurge - use more!)
1/3: Cup Parmesan cheese (I used fresh but shaker is fine)
2: Cups frozen mixed vegetables (green beans, corn, peas, carrots, etc…or use fresh!)
2: Tablespoons Worcestershire sauce

BAKING DIRECTIONS:

* Set oven to 400 degrees.
* Grease a 13 x 9-inch baking dish.
* For potato topping; combine half a can of cheddar cheese soup with hot mashed potatoes; set aside.
* In a fry pan brown ground beef with oregano, chopped onion, garlic, seasoned salt or white salt and pepper. Drain off fat, then stir in shredded Cheddar cheese and Parmesan cheese.
* Meanwhile cook mixed veggies according to package directions then add to beef mixture in fry pan with remaining half of cheese soup.
* Add in the Worcestershire sauce and any variations of choice; mix to combine and simmer uncovered for about 20-30 minutes over medium-low heat stirring occasionally.
* At this point adjust all ingredients to suit taste.
* Spoon meat mixture into greased pan; spread potato mixture evenly over surface.
* Bake for 25-30 minutes or until topping is light golden brown. (I sprinkled a bit of cheese on top during the last 3-5 minutes of baking time under the broiler.

VARIATIONS: Add to the ground beef mix to shake things up!

* 1-1/2 cups good quality beef broth mix/whisked with 1/4 Cup flour (for a thicker ground beef mixture).
* 2 Tbsp Dijon mustard or 1-2 tablespoons yellow mustard.
* 1/3 Cup ketchup or chili sauce.
* 1 - Envelope dry onion soup mix (note that this has a high salt amount!).
* Sprinkle some grated cheddar cheese on top of the mashed potatoes and broil about 3 to 5 minutes before the end of baking.

I Never Read Rumor Queen

I always chuckle when I read people debating the good, the bad and the ugly about Rumor Queen. It's on par with admitting you read (or worse - admitting you buy) the gossip mags lining the grocery store check out lane.

I don't personally buy the gossip mags but who's kidding who - I scan the cover. All to say, have you caught this latest one from the one and only IA Queen of Rumor????

European Rumor

A European site says the cut off will be the 12th, possibly the 13th. There is no information about where this information comes from. They say they are “confirming this”, they aren’t treating it as a rumor but as fact.

I give it an R1 or an R2 at this point. I hope they are right, but I wouldn’t take it to the bank just yet.


So, any doubts as to whether this little jewel grabs the attention of those standing in the adoption world Waiting Line?...And oh yes, would you like paper or plastic?

Fall Festivals Are In The Air

Every season has its own special uniqueness that brings out its best... Fall is leaves in their kaleidoscope richness, intense renewal of football game rivalries and Fall Festivals. Church, school and community festivals are everywhere this time of year.

It's a great time to walk and be outdoors... We hope wherever you are, you are enjoying your Fall Festival time of the year!

This past weekend we slipped down to catch Leaa & Jesse perform at the St Monica Fall Festival. The weather was "iffy" so they moved the music indoors (and possibly to avoid getting splashed from the dunking booth :) As soon as we rolled in with Livi she began clapping. She loves to listen to her mom and dad sing. She also has a way of "kicking back" and "chillin" in her Bob...

During a break Jesse (on the right) came over to spend some daddy time with Livi. Their next door neighbors were there with their bundle of love and joy as well. We snapped this picture just after a lady from one of the craft booths brought over these two little knitted caps to give to each girl as a gift. Too cute. People can be so nice. Fall Festivals. Just one of the many reasons to love this time of the year...

Fall Festival Family Fun



Justin, Kilee, Leaa, Livi & Jesse attended the Fall Festival put on by the St. Ambrose Catholic Church in Elkton, Fl.

A great neighbor couple living next door to Leaa & Jesse invited them all to attend the festivities. It was a hoot! Games for kid's, face painting, raffles, home-made goods for sale, hay rides, live music, clogging, a beer garden, tons of BBQ, chili and more and more and more...

Kilee and Livi had a blast! Heck, we all did. Great family fun. And oh yes, we got to take pictures and bring a slab of ribs home for dinner :)

We are in Mourning.... Loss of "CB"

My oldest and most unique cat died last night. Her name was "CB" which stood for "coon bait" and she was 19 1/2 years old. She had been declining over the past 6 months but she was still eating and moving about, if slowly.
I "adopted" her when, as a 6 week old kitten, in a rainstorm, in the parking lot at work, where she was just sitting near my parking spot. There were many wild cats at the construction site and kittens were appearing spring of 1988. I immediately scooped her up knowing she wouldn't be in this world long if I didn't take her inside. Of course my poor DH didn't have much choice in the matter......
We named her CB the first week when she was on our screen porch and some raccoons broke through the screening to get to the cat food. CB would sit on a chair and watch them eat her food.
Later CB was known to be DH's mother's cat when she visited as CB would walk with her throughout the neighborhood, just like a dog, following her everywhere.

Dear Friends Retirement Dinner


The couple who literally signed our "marriage license" (in 1985) treated us to a wonderful dinner (and wine) at our favorite Italian restaurant in celebration of Ford's retirement. We love Sarnelli's in Orange Park and have for years.


There is so much we could say about this couple. Larry has to be the most brilliant engineer I've ever had the privilege, honor and fun to work for and with on multiple projects. So steady. Calm. Efficient. He has patience and is a great teacher.

Charlotte, a true southern charmer hailing from New Orleans was the one who along with Larry introduced me to drinking red wine. Charlotte also was responsible for my subscription to Southern Living magazine all these years. She immediately took me aside after I married Ford and told me that having married a southern man I was now going to have to start cooking like a southern woman :) I'm still not certain how Larry was able to talk her into leaving her job at a New Orleans TV station to travel along with him around the country but somehow he did it.


They are just a wonderful couple who bless us with their presence at Thanksgiving each year. Our times together are always special. And while Charlotte and Ford indulge each other in their political "fencing", Larry and I enjoyably sip on our glasses of red wine...

Life is indeed good with friends like you two. Thank you both so much!

White Swan Staying Open

The White Swan Hotel will not close this December. The renovations have been rescheduled to begin in May 2008 and last for at least one year. It is not known if the White Swan will welcome adoptive families after they re-open following renovations.

Lobster - Cousins Redmond's




You have seen our postings on cousin Carolyn who is living/visiting with us for a few months since accepting a new teaching position. Her parents treated us and my Mom to lobster while in Maine - sorry Carolyn - you didn't get any!!!

They also had evening visitors snacking on their lawn...... they say the deer visit most every day.

We were very fortunate to have lobster twice during our visit to Maine. My Mom treated us on Sunday and then our cousins treated us with a lobster dinner on Monday evening.

Here's the pictures from Mom's luncheon with sisters Terri and Melissa with family. Can you tell the before picture from the "after" picture (the one with the full lobster shells?). And don't tell - we did drink champagne with our lobster - yummy!! How many times can I say how blessed we are (or is that spoiled??). Thank you Lord!!

Happy Birthday to Sis Missy

*Update: Sister is home recovering. All went well with the surgery. Her health should be improving so that she can return to work in 4 weeks. Thank you Lord!!


My "baby" sister, Melissa, is celebrating a birthday today! She goes by Mel, Missy, Mom, Melvin and Auntie M. She may look a little tired in the picture; she had just finished baby sitting grand-nephew Brandon for three full days and nights! Here's a recent picture of her with beau Matt (he's the saint).


Also, everyone please keep her in your thoughts and prayers as she undergoes that dreaded female operation on this Thursday the 18th. She will need lots of love and support!

Here's hoping for an LID mix-up being corrected or simply RQ and her legions stirring the pot.

Apple Picking - More from Maine





Each fall (usually early October) that we are in Maine, we drag nephew Andrew along for apple picking. This year sister Mel and Matt were babysitting Brandon, plus Mom - so the whole gang was there! There is one orchard very close to our home that has the best apples and the easiest to pick.... of course we pay for the convenience and fun!!

We brought back enough apples to eat a fresh one every day for months and to make apple pies, applesauce, apple cake and what ever else sounds good to add with apples. Since apples do not grow in Florida, it is nice to have fresh, tart apples.

Grammie's Crystal Glassware


I posted a while ago about my Grandmother's china that will be passed on to Alyzabeth. I found some odd pieces on eBay to add to the set.

My Grandmother also had three sizes of a clear crystal etched glasses (champagne, water goblet and tall tumbler) to go with the fancy china. I recently found out the pattern name and found some on eBay which I immediately bid on with a vengeance!

I won the auctions and now have 9 more glasses to add for Lizzy. The pattern is named "Princess" which I would have never guessed since the etched pattern is of thistle flowers (or possibly poppies). It is very fine glassware with optic glass panels on the "blank", then etched with a pretty repeating flower pattern. The champagne glasses are actually two different sizes, one being a larger "saucer/bowl". Now to find an old catalog or advertisement to find out all the available pieces.......

Time Article - Stay At Home Dads

Time has an article on Stay-At-Home-Dads in this month's magazine entitled Fatherhood 2.0. While it doesn't exactly cover new ground I find that I naturally gravitate to articles that bear heavily on my life soon-to-be. As well as that of my good friend Don...

Don and I have and continue to encounter varied responses when it is shared that we will be the Stay-At-Home-Dads. I'll not go into any details. It's easier to just let it go at this point. I've talked with Don on numerous occasions. We're excited about our upcoming roles as Dad's who will be the primary care givers during the day. We're not Mr. Mom's. We're the Dad's. Each of our daughters will have Mom's. Be & Alyson...

We're not attempting to be naive here, we know that many bumps, those planned and those unexpected await us. We'll do our best. Our very, very best... to be the dad's our daughters will be proud of and the husband's our wives both respect and deserve. Thank God for our wives.

We can do it Don. We will do it friend. And it's all good.....

Our Twenty-Something's Celebrate Birthday's

Leaa and her sister Nicole celebrated birthday's this past weekend. Helping to sing Happy Birthday was Werner & Cathy, Katie and Cara, Leaa & Jesse, Nicole, Christa and Stewart, Justin, Carolyn and Alyson and Ford. It was family fun having everyone here except we were missing Carl and Marsha who stayed home to take care of an under the weather granddaughter, Livi. And we didn't have our perpetual wheel of motion, granddaughter Kilee, as well as Charles, Angie and Ian. We missed you all...

Birthday girl Nicole, fighting off a sore throat of her own, still smiled for the camera before blowing out her birthday candle. It was a tough crowd as they wouldn't let her blow out the candles on her cake :)

Two cakes were requested. Nana Joy's Chocolate Sheet Cake above is a perennial favorite and one Aly makes often. Each bite literally melts in your melt. Seriously, it melts. It's that good. Kids and adults love it! You may notice we went "lite" on the candles this year :)

The other request was for a Strawberry Cheesecake. Aly complained about how the cheesecake "looked" but I didn't hear anyone complain about that or the taste! We all love Alyson's cheesecakes.

It's Official: Referral Cutoff Is November 30

The CCAA has finished the review of the adoption application documents registered with our office before August 31, 2006.

The CCAA has finished the placement of children for the families whose adoption application documents were registered with our office before November 30, 2005.

If memory serves me, the first of the November referrals began in May of this year. That's a sobering thing to think about going forward...

Virginia Wineries





On our drive back from Maine, we stopped in Virginia to have dinner with our good friend (met all the way back in Junior High School). We had a great time talking, catching up on our very busy lives at a local Greek restaurant then said our farewell for the evening - just wish we had taken some pictures!! Vicki, remember to send us the cucumber-garlic dip!! Yummy!

We planned to tour some wineries the next day so we drove on a few more hours to The Holladay House B&B in Orange (near Charlottesville). Our hosts and breakfast were excellent. And our bedroom had a wireless connection!

The two wineries we visited had wonderful wines (we love reds) and had made considerable improvement from our stop many years ago (mid-1990's). It was a good day and we enjoyed mingling with others gallivanting about the countryside as well. Of course, how can it possibly be a bad day when your task at hand is "sampling" wines :)

Happy Wedding Anniversary to US!! #22

Yesterday was the big day - another wedding anniversary during the "WAIT".......

Happy Anniversary to my dear Hubby - my lover, friend, cutie-pie, handsome hunk, unbelievably nice, patient, kind, intelligent, servant to others, hand-holder, kisser and special soul mate. He's all that and has put up with me for 22 years!!

You know we are "older than dirt" when it comes to starting a family (we have two grown children and two adorable grands!) - so the wait is becoming very hard, knowing and wishing that the original wait of 6 - 8 months would have been our destiny. Alyzabeth An we are still waiting for you whenever God says it will be so.

Can You Stand Another Recipe?

Tonight's Dinner: Muffin Tin Crab Cakes

This was the second time making this recipe. I kicked the recipe up a bit but I plan to keep trying to improve on this one. The taste is still too tame. Good. But could be better. My dining companions did say it was an improvement on the first attempt. I appreciated the feedback.


It easily makes 12 muffin crab cakes but I still want to "spice" up the flavor more. I was out of Old Bay seasoning and I am convinced that the recipe could use its added punch... Below is a closeup before placing in the oven.

Below: The baking is completed, ready to be removed from the muffin tin and plated. The recipe follows.

Ingredients:

1: LB Crab Meat
2: Cups Restaurant Style Seasoned Croutons (Crushed)
1/2: Red Pepper
3: Scallions (Sliced)
1/4: Cup Mayonnaise
2: Large Eggs
1: Large Egg White
1: Tsp Hot Sauce (Tabasco) I plan to increase this the next time
1/2 Tsp Cajun Spice (I will use Cayenne next time)
1/2 Tsp Celery Salt
1/4 Tsp Fresh Cracked Black Pepper

Directions:

1. Preheat oven to 425 degrees F.
2. Generously coat a 12-cup nonstick muffin pan with a cooking spray.
3. Mix crab meat, croutons, bell pepper, scallions, mayonnaise, eggs, egg white, hot sauce, celery salt, Cajun spice & black pepper in a bowl until well combined.
4. Divide mixture evenly among the 12 muffin cups.
5. Bake until crispy approximately 20 minutes.

Paula Deen does have a very similar recipe for full sized muffins called "Pecan Pie Muffins".

These mini pecan muffin-like desserts can be eaten anytime for snacks or breakfast. I find them sweet enough to use as a dessert with coffee. Maybe a little whipped cream or cream cheese frosting on top too? These are so delicious, you truly cannot eat just one (as my Mom saw me eat several at a time while in Maine recently...).
I made these for church hospitality and everyone said they were very good (sweet and yummy!).

Preheat oven 350 degrees. Bake for 15 - 20 minutes.
2/3 C. butter
2 eggs
1 C. brown sugar
1/2 C. flour
1 C. finely chopped pecan (may substitute walnuts)

Mix together the flour, pecans and brown sugar.
Mix together the butter and eggs. Blend in the dry mixture. Fill greased mini-muffin pan (makes 24 mini's).
