Paula Deen does have a very similar recipe for full sized muffins called "Pecan Pie Muffins".
These mini pecan muffin-like desserts can be eaten anytime for snacks or breakfast. I find them sweet enough to use as a dessert with coffee. Maybe a little whipped cream or cream cheese frosting on top too? These are so delicious, you truly cannot eat just one (as my Mom saw me eat several at a time while in Maine recently...).
I made these for church hospitality and everyone said they were very good (sweet and yummy!).
Preheat oven 350 degrees. Bake for 15 - 20 minutes.
2/3 C. butter
2 eggs
1 C. brown sugar
1/2 C. flour
1 C. finely chopped pecan (may substitute walnuts)
Mix together the flour, pecans and brown sugar.
Mix together the butter and eggs. Blend in the dry mixture. Fill greased mini-muffin pan (makes 24 mini's).

mmmmmm...they do look good! I'm going to give them a try. I just baked 2 loaves of Amish Friendship bread - very good. I put walnuts in one and cranberries and walnuts in the other.

Hi Alyson! Thanks for stopping by my blog! It was nice to get your comment! I was a flunkie and DID NOT make moon cakes after all, but I did make baked pears....they are round like cakes??? That should count for something.
I am really enjoying your recipes!!! We LOVE Pecan pie and have never made mini pecan muffins....might have to give it a try.
