Poppy's Peanut Brittle Recipe

A few of you have asked for "my" Peanut Brittle recipe and I'm only to happy to pass it on to you. Once you have made this recipe successfully you are expected to claim it and name it as your own :)

Poppy’s Peanut Brittle


INGREDIENTS:


1- Cup Sugar

1- Cup Dry Roasted Peanuts; Lightly Salted

½ Cup Karo Light Syrup

2 Tablespoons Butter

1-Teaspoon Vanilla

1-Teaspoon Baking Soda


DIRECTIONS:


Step 1

  • In a large bowl, add sugar, peanuts and syrup. Mix well.
  • Microwave for 6 1/2 minutes on High setting.

Step 2

  • Add butter and vanilla. Stir well.
  • Microwave for 2 minutes on High

Step 3

  • Add Baking Soda; STIR vigorously and rapidly; approximately 6-8 seconds.
  • Using a silicone spatula, quickly scrape onto a buttered cookie sheet.
  • Gently shake cookie sheet to spread brittle to desired thickness.
  • Let cool, break into pieces.


COOKING NOTES*

· Each microwave cooks differently. If your first batch smells burnt after the first cooking step, pitch it and begin a new batch reducing the first step time in 15 second increments. By example, due to our microwave's output, our first step cooking time is a full 6 minutes. Your cooking time will be between 6 to 6 1/2 minutes.

· Do not reduce the second step cooking time, it will remain a full 2 MINUTES.

· Use pot holders when handling the cooking bowl. It gets very HOT!

Looking forward to making this, do you do the first step in increments or all 6 minutes at once.

All 6 to 6 1/2 minutes at once. The second step is only for 2 minutes.

I made this tonight and it came out perfect. It's the perfect consistency when you bite into it. Will have to make more tomorrow, because I know it will not last LOL Thanks again for sharing.
