Monday was AA's Girls High School Golf Districts (separate post).
Tuesday: Donna came to clean the house. We went to the Spring Park Coffee shop so I could work, and Ford read/relaxed. We had lunch at MoJo's then walked on the Doctor's Lake boat launch dock.

We went to the River House with Hugh, Maureen, Kathy and an "old" friend of theirs, Norma (from Missouri - this is the second time she came, and has now joined/member). Dinner was a tortellini, with spinach, tomatoes, a meatless meal. Yum!

Wednesday: I continue to work a few hours each day, this project is ending soon, so not sure how much longer APTIM will keep me. On to my next job! We did watch Tyler (FIHS Boys Golf Team) play a few holes, since their tournament was local at the FIGC. The boys did not play as well as they would have liked, but still placed 2nd so are moving on to the Regionals just like the girls golf team.
We made a new Mexican Enchilada casserole, which was pretty good. We added a small can of green chilis and will probably add a can of pinot or black beans, and diced fresh jalapeno pepper as a garnish.
Easy Enchilada Casserole:
1 pound ground beef or turkey
1 cup (1 small) chopped onion
2 clove garlic, finely chopped
1 3/4 cups (16-ounce jar) Thick & Chunky Salsa
1 3/4 cups (1-pound can) Refried Beans
1 1/4 cups (10-ounce can) Enchilada Sauce
1/2 cup (2 1/4-ounce can) sliced ripe olives
10 (6-inch) corn tortillas, sliced in half, divided
2 cups (8 ounces) Shredded Mild Cheddar Cheese, divided
Sliced green onions (optional)
Preheat oven to 375� F.
Cook beef, onion and garlic in large skillet until beef is browned; drain. Stir in salsa, beans, enchilada sauce and olives. Bring to a boil. Reduce heat to low; cook, stirring frequently, for 5 to 6 minutes.
Layer half of corn tortillas on bottom of greased 13 x 9-inch baking dish. Cover with half of meat sauce; sprinkle with 1 cup cheese. Repeat layers. Bake, covered, for 20 minutes. Remove cover; bake for additional 5 minutes or until bubbly and cheese is melted. Sprinkle with green onions before serving. Note* Served this with shredded lettuces, chopped tomatoes, chopped onions and guacamole sides along with your favorite corn tortilla chips. Makes 8 servings.

Thursday: Ford went to his exercise class, then grocery shopped while I baked apple crisp and baked pumpkin bread.
I am posting the recipe here again, I do add a bit more leavening and chop golden raisins in with the nuts and dried cranberries. I baked all mini-loaves (takes about 20 minutes baking time).
After picking up AA from school, taking her to the FIGC, she spent a couple of hours with Coach Nedrich. No other golf team members showed up! Nedrich told us that AA was highlighted at the high school morning news - Colton normally pre-records it but yesterday, he was playin gin the boys Districts - so a substitute called AA "Aly-Beth"! Not everyone gets that it is pronounced just like Elizabeth but with a short "E" (an "A"). Ah-liz-ah-beth.
We ate leftovers (enchilada casserole) for dinner.
Friday: We completed early voting. Visited Larry Bradley, took him some pumpkin bread mini-loaves, he's still waiting on some test results to see if his cancer is back. Flu shots at Publix (free) for only me as AA came home from school not feeling well. Her temperature went up to 100.7, then dropped back to 98.6 after some Tylenol. She rested, stayed in bed, ate a good dinner of roasted potatoes, cabbage and bratwurst with mustard sauce. I met Donna Musselwhite at Starbucks (finally) and chatted about our daughters, her grief (losing her son back in January), school (her Catherine is a FIHS senior), cars, her work, etc. Good to meet and catch up. On my way home, I called Lona Hill to chat about our co-worker SJRPP Larry Gochnour had passed on Tuesday (He and Lona were frequent lunchtime buds at work). It was good chatting with her and catching up on her news.
Saturday: AA woke up with coughing, runny nose and regular temperature, but it went up to 100.7 again, so no going to Ian's pumpkin carving event at his home. I did run a few errands (Walmart, groceries, gold foil cupcake liners and a mango smoothie for AA - plus bought pumpkins at FIUMC). AA rested most of the day, ate well, and did a little homework.
AA spent two days in her room, coming out for just a few minutes. The flu really kicked her this weekend, she missed Ian's pumpkin carving party (dinner/movie), withdrew from Sunday's NFJG tournament. She did go to school Monday, we shall see if she is on the mend.
Sunday: We withdrew AA from the NFJG Tournament in Palatka. Her fever continued to bounce up and down, with lots of coughing. She tried her swing sticks but was a bit dizzy, she took a shower, but rested most of the day. Ford called Ben to wish him a happy birthday, we baked a frozen pizza casserole and watched the Jaguars lose to the Broncos in London!
