2022 has to be better than 2020 and 2021. It is the third year of COVID. We did well with being outside, golfing and limiting our visits to mostly outdoors. We did miss many family gatherings. We have to all learn to live with it and be considerate of all human beings.
{I already posted about January 1st and 2nd (2022) in my last 2021 post.}
Monday, January 3rd: I baked "Boston Baked Beans" in the bean pot Larry gave me. I worked a few hours, getting caught up from the past four days off.
Done!
Parboiling the beans and rendering the fat form the salt pork. I don' think I will parboil them next time or just for a short time (my Mom said t boil just until the first bean skin starts to peel). Mine were a bit mushy.

We went to the River House with popcorn only. Great conversation, cool weather so sat inside the porch area. AA had her golf lesson and played until 5:30 p.m.
Tuesday: AA went back to school, it is 40 degrees! Brrr. I worked for a few hours, still catching up on the power plant news. FIHS Golf Team Banquet was tonight - see separate post.
Wednesday: Ford and AA picked up Ian for his first day back to school since his surgery! Ran errands and visited Larry Bradley, gave him some baked beans. I worked for several hours. We opened a box of Christmas gifts from Melissa, lots of surprises and great gifts! Lakeside stemless wine glasses, oodles of shirts, hand towels, wine glass charms, wine bottle stoppers, books, pillow cases....
Thursday: Working at home all day after getting a few assignments for the Lakeland bid from Robert/Chuck. We had an overflowing amount of recyclables to take to the library dumpsters, so a quick noon break and lunch at home. For dinner, we ordered V's Pizza take-out. Caprese salad, wings and Ford's sausage and pepper sandwich. AA played golf from 3:30 - 5:30 p.m.
Friday: Ginger went to the groomers, she was shaved pretty close as we had gone too long between appointments, she should have been groomed two weeks ago, but couldn't get an appointment during the holidays. Ford did the grocery shopping. I worked some more on the files for Lakeland bid and general work research until 6:00 p.m.
Fried fish dinner with Larry. Ford made hush puppies and a cherry preserve dessert.
Saturday: Weekend off! No golf tournaments. We drove to the RAM market and bought roma tomatoes, collard greens (my first time to cook), mint and cilantro. Didn't buy any other items or gifts. We ate lunch at the Moon River Pizza, always love their fresh salads and each ordered pizza by the slice, so we could order to our own liking! I made homemade guacamole for the River House group. It was good per Maureen and Kathy but Hugh said he was not a fan of it.
