I found the recipe titled "Civil Rights Spiced Sweet Potato Pie" and with sweet potatoes right from Carolyn's garden, I wanted to make something my two other family members would eat! I partially pealed the potatoes before cooking in microwave.

While making the pie filling, I decided to go back to the basic One Pie recipe as I don't care for fillings that use the sweetened condensed milk. I use the evaporated milk along with brown sugar for this pie (with spices, two eggs, melted butter). It called for allspice which I did not have. It was pretty good but I still like pumpkin pie better.
INGREDIENTS
1 16 oz can of One-Pie pumpkin puree (or any pumpkin puree)
1 tablespoon cornstarch
1 12-oz can evaporated milk
1 cup sugar (or 1/2 cup white sugar & ½ cup brown sugar)
2 tablespoons molasses
1/2 teaspoon ginger
1/2 teaspoon cinnamon
2 tablespoons molasses
1/2 teaspoon nutmeg
2 eggs
1/2 teaspoon kosher salt
1/2 tablespoons softened butter
DIRECTIONS
Mix all of the above ingredients thoroughly in a food processor on high for 1 minute. Pour into a 9-inch glass pie dish lined with a store bought or favorite recipe uncooked pie crust. Preheat oven to 450 degrees and bake at 450F for 15 minutes, and then reduce the temperature to 350F and bake for another 50 minutes.
