Miscellaneous July 2015 Stuff and Recipes

Catching up on the past week - from Facebook; Saturday, 07/18/15:
So glad yesterday is over! I had my annual physical in the morning, then blood work. Headed to a late lunch with AA and Hubby. While being seated AA says she has an upset stomach. Home we go. I still hadn't eaten since dinner the night before. Bad news for me - low blood sugar sets in and migraine, try too late to eat something..... (You'all who have migraines know what happened next). AA and I in bed all yesterday afternoon. She is fine today. I am too. Reminder to self, immediately get a Gatorade or smoothie after annual physical (hadn't had one since 2010 - yes, I avoid Doctors....). Today, busy! Pre-cooking food to take on trip to Pinehurst next week (we just found a house to rent, no small hotel room!!), pre-packing, laundry and house cleaning. Getting golf stuff ready for tournament tomorrow. Plan to relax by early evening.

I tried a new recipe - something a little different for breakfast:
Apple Cinnamon Breakfast Bites (from And they cooked happily ever after...)- Ingredients:
1 cup cooked quinoa, 1 cup quick oat, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg,
3 tablespoons brown sugar, 1 tablespoon granulated sugar, 1 tablespoon maple syrup, 1 cup chopped apples, 2 eggs, lightly beaten.

1) Preheat oven to 350 degrees.
2) In a large mixing bowl, add your cooked quinoa and quick oats. In a separate smaller mixing bowl, combine your cinnamon, nutmeg and sugars and then add the spice mixture to the quinoa and oats. Then add the maple syrup, apples and eggs and mix until just combined.
3) Spray your mini muffin pan (24 count) with non-stick cooking spray. Make sure to spray the top of the pan as well. The quinoa bites will overflow out of the cup a little bit, so you don't want the tops to stick.
4) Fill each muffin slot with 1 tablespoon of the mixture and bake for about 15-20 minutes. Serve warm! 
I loved them, but my two other house-mates didn't - they are so "bacon/sausage/egg" type of breakfast people, I can hardly get them to eat something new (that is healthy)!
I also made Fruity Scones from Cook's Country, which my finicky breakfast eaters did manage to say they would eat again. So I will make them again while in Pinehurst. Having a rental home for the week will be a treat to have home-cooked meals while away - no hotel room for us this time (and it was less expensive!).
Summer is going by too quickly. Golfing everyday, pool time and summer school work.... Teaching AA how to dive.... She can do it, now to practice!
Lots of family news - I copied photos from Facebook; we haven't seen the Grands in SOooooooo long.... our fault; get busy and haven't planned a meet up. We are remiss - glad to see how active they are through Facebook! Nicole and Jordan have sold their house; can't wait to see their new one - in a golf course neighborhood no less! Dylan has been to surf camp, Livi is horseback riding and Jesse has opened his music studio (plus some not so happy news: Werner had a heart procedure (all is well now) and Leaa's dog Franny died).
