I made vanilla extract last year for Christmas gifts so this year am trying out a homemade lemon extract recipe.
Here's a blog that has lots of recipes if you want to do some research.
I read many recipes, some that include sugar and/or heating the sugar with the lemon zest and some add water and/or some lemon juice. Since most only had two ingredients: the zest and vodka, I am trying that first. Hoping it has a strong flavor for baking. If this doesn't seem strong, I will probably try adding lemon juice next.
Now to wait a month!
