Frozen Yogurt Popsicles

My Hubby bought some yogurt that he was going to use in a recipe and then decided not to. He said he would figure a way to use it up. Well, one could make homemade salad dressing or a coleslaw dressing with it. So many thing to use it in; so what was my first thought? Frozen yogurt! Almost as good as having ice cream which we NEVER have in this household!

Just to make sure I didn't "wing it" as to a recipe, I searched and found many. Here's two I used as the basis for mine. We used raw sugar (not honey or white sugar, it is your choice), I also decided to add the vanilla extract. Since I have so much of it after making my own homemade extract, thought it would add some yummy flavor. I also found one recipe that included a small amount of lemon juice. Here's my final recipe:
One cup plain yogurt, one cup cut up strawberries that have rested for one hour with a tablespoon of raw sugar, 1/2 teaspoon vanilla extract and 1/2 teaspoon fresh lemon juice. Place all in a food processor and then spoon into molds or small paper cup and freeze. Hope AA thinks they are delicious!

Next time I may have to try the chocolate cupcake frosting using yogurt - check it out here, only three ingredients.
