Recipe Tomato Onion Pie - Mangia Meatless Monday

Dear Hubby made a new savory pie for our dinner. We can buy really fresh tomatoes at the market so we always have tomatoes each week (plus it is a favorite veggie of AA's). And with an abundance of local sweet onions, we also frequently have onions in most every meal. This recipe came out great, even though, as usual, Hubby rarely sticks strictly to the recipe. We loved it, so hope he makes it again! It would make a delicious brunch meal too.

Hubby substituted sweet fresh onion for the green onions and didn't prebake the pie crust, just baked it 20 minutes longer (tent the pie crust edge with tin foil to prevent over browning).
