The recipe is often referred to as North Carolina Cole Slaw. You could of course substitute the name of your state or do as I did and name it after a favorite relative OR you can make up a name :)
According to our daughter Leaa, this cole slaw tastes just like her Aunt Linda's. I don't know if this is how Aunt Linda makes her tasty cole slaw but I do know Aunt Linda cooks very, very well!
So, from this day hence, it shall be Aunt Linda's Cole Slaw...
If you are looking for a vinegar based cole slaw without mayo, look no further :)

Aunt Linda's Cole Slaw
INGREDIENTS:
* 1 medium to large head of fresh cabbage; chopped or shredded
* 1 medium onion; diced
* 1 medium green bell pepper; diced
* 1/2 cup vinegar
* 1/2 cup sugar
* 1/2 cup salad oil
* salt
* pepper
* celery seed
DIRECTIONS:
· Combine chopped cabbage, onion, and green pepper in a large mixing bowl.
· In a medium size saucepan, combine vinegar, sugar, and salad oil; heat to boiling.
· Immediately pour hot liquid mixture over vegetables to get desired wilting.
· Add salt and pepper and a generous sprinkling of celery seed to taste.
· Toss well to coat vegetables.
For best flavor, refrigerate coleslaw for several hours or overnight.
