Vegetarian


I do love veggies, nuts and fruits but have not known how to really cook "vegetarian" for regular meals. We usually end up with a few meat-less meals each week but it is not a planned vegetarian meal. We love having BBQ, blackened fish, roast chicken or turkey, an occasional steak... so you can see we are not ready to go 100% vegetarian. When we reduce our "caloric-intake" (we don't say the "d" word), eating more "raw" foods is better.

We were driving to this Children's Home quarterly Board meeting today and we usually pick up a quick lunch in Deland. DH, by chance, saw the sign for the Deland Bakery (all natural, organic) that stated a sandwich shop was inside. We took the chance and tried it. We had a veggie wrap and a tex-mex wrap with guacamole tortilla chips and all natural juice sodas. Very good. We would stop by there again. The funniest thing was when I asked to use the ladies restroom, I was escorted through the bakery, past the employees making bread, all the way to the back of the factory. I guess they haven't planned for a long term cafe in the store!!

I was reading Crazyhippiemom's Weblog (check out several of her latest posts, very unique) and then went to one of her recommended sites called In a Vegetarian Kitchen.
I found a recipe for Black Bean/Sweet Potato Chili. We recently had our first Chinese cooking lesson and it included sweet potatoes. I think this chili recipe is worth making.

Does anyone have these cookbooks? Any favorite veggie recipes?

I've been a vegetarian since the 4th grade, but I don't cook. At all. Fortunately, my husband is a fantastic cook! He uses the New Farm Vegetarian Cookbook (published by the hippie commune he grew up in). It has lots of great basics.

I have Veganomicon - not vegan, but don't do so well with dairy - some of the recipes are simple, some more involved, but so far all are tasty!

Nope, no veggie cookbooks,but I do have a "mac daddy" recipe for Portabella Basil Lentil Stew if you want it - so yummy!

I am not a vegetarian, I eat chicken, turkey, and fish...rarely do I eat red meat....I happened to see this recipe on tv...big food network fan....and I tried it....delicious!

We are fairly consistent meat eaters at our house, although we do enjoy vegetarian meals here and there!

One of our regular meatless main dishes is from Betty Crocker's Low-fat, Low-cholesterol Cooking Today cookbook.

LAYERED ENCHILADA BAKE

1 cup fat-free refried beans
4 oz chopped green chilies
1 small tomato, chopped
4 corn tortillas (5" or 6" diameter)
1 1/4 cups green salsa
1 1/2 cups shredded reduced-fat Cheddar cheese
Fat-free sour cream, if desired

Heat oven to 350. Spray pie plate, 9 x 1 1/4 inches, with cooking spray. Mix beans, chilies and tomato. Place 1 tortilla in pie plate. Layer with one-forth each of the bean mixture, green salsa, and cheese. Repeat 3 times.

Cover loosely and bake 25 to 30 minutes or until cheese is melted and beans are heated through. Serve with sour cream.

David is the chef at our house (I don't cook, I heat) and Ariel has been a vegetarian since the age of five, so we eat a lot of vegetarian meals. Right now David's favorite cookbook is not a vegetarian one, but he's found a lot of great vegetarian recipes. It's the annual Food & Wine cookbook from Food & Wine magazine. We got in through AmEx but it's probably available elsewhere.

Are you daring to think you could be less than 3 weeks from a referral, or are you not letting yourself go there? My fingers are crossed for you!! But if you get an August referral with us we look forward to meeting you in person in China!!

Moosewood Restaurant has a sweet potato/black bean burrito recipe in their low-fat cookbook that is scrumptious. You really can't go wrong with any of the Moosewood cookbooks; they're all vegetarian.

I've been a vegetarian for 15 yrs now; but I don't have this book. I have many. . . but I am 'borderline vegan' so many of my favorites are along those lines. However, one I really like is called The Complete Vegetarian Cuisine by Rose Elliot.

We have Veganomicon and it's good, but most of the recipes are too involved for us during the week. We also have Moosewood Simple Suppers which is fantastic. Everything we' ve made had been delicious and very do-able on a weeknight.

We're new vegetarians (technically I think pescatarians since we still eat fish, eggs and dairy) - only a few months in, but it's lots easier than I thought it would be.
